Monday Night Dinner Salad for One
When you’ve been running around all day and want something quick on not too complicated - this is a great combo.
Let’s say it’s a Monday night and you’ve just managed to get through all the items on your to-do list. You want something great (that perhaps pairs well with the Irish Brown Bread you made over the weekend). Keep these ingredients on hand for when this situation arises:
Spring Blend Salad (I fill a large salad bowl 1/2 way)
Mini Cucumbers (2)
Garbanzos (1/2 cup)
Walnuts (1/2 cup)
Avocado (1/2 cubed)
Belgioioso Salad Blend Cheese (Shaved Asiago, Parmesan, Romano) (1/2 cup)
These proportions are what I used in the photos, but depending on which of these you like the best you can use more or less. Here’s why you’ll love them:
Spring Salad - vitamins A and K, folate, and manganese, while being naturally fat-free;
Mini Cucumbers - vitamins C and K, as well as potassium, which is important for heart health;
Garbanzos - calcium and magnesium, iron, and calcium;
Walnuts - packed with antioxidants, including vitamin E, selenium, and manganese, omega-3 fatty acids, particularly alpha-linolenic acid;
Avocado - antioxidants, including vitamin E and polyphenols;
Cheese Blend - amino acids, calcium, phosphorus, zinc, and vitamins A, B, and E
Dress this with a simple oil and vinegar blend - I like to blend olive oil with avocado oil and a bit of Apple Cider Vinegar mixed with Italian Herbs. There is so much flavor in these ingredients you won’t want to drown this salad in much more than that.
